My Pickled Red Onions
What is this?
This is a recipe for pickled red onions
Why should I eat it?

- Easy – Requires minimal ingredients and equipment
What do I need?
- Red Onions - 2 for this recipe
- Sugar - 1/3 cup
- Salt - 2 tbsp
- White Vinegar - 2 cups
- Water - 2 cups
- Pot to boil the brine
- Mason jar(s) that fit the 2 onions and handle high temperatures
The Red Onions
- Start making the brine, then while it is boiling (3), start these.
- Slice the red onions into thin strips. You can use a mandolin, but I don’t have one, so I just used a sharp knife.
- Gently break up the red onions with your hands so that all of the pieces are separated.
- Place the red onions in the mason jar(s).
The Brine
- Add sugar, salt, white vinegar, and water to the pot.
- Mix the brine until the salt and sugar are fully dissolved.
- Boil the pot on high until a rolling boil.
Combine
- Once the brine is boiled, pour the brine into the mason jars that have your sliced red onions in them.
- Seal the mason jars with the lid.
- I like to wait for the mason jars to reduce in temperature before putting these in the fridge, however, I don’t think this is necessary.
Serve
After 1 day, these are ready. Serve with anything.
